Blueberry Cream Cheese Muffins
Ingredients (Muffins)
- ¾ cup milk
- ½ cup vegetable oil
- 1 egg
- 2 cups all purpose flour
- ⅓ cup sugar
- 3 tsp baking powder
- 1 tsp salt
- 1 cup fresh or drained canned blueberries or ¾ cup frozen blueberries, thawed and well drained
Ingredients (cream cheese):
- 1 pkg (8oz) cream cheese
- ¼ sugar
Directions:
- Prepare muffin batter
- Divide ½ the batter among 12 muffin tins.
- Combines softened cream cheese, using electric mixer, beat on medium speed for 1 minute.
- Divide cream cheese among batter in muffin tins. Top with remaining batter.
- Bake in a preheated oven at 400 for 18-22 minutes or until golden brown.
